Creating a plaid effect in knitting is a lot less complicated than it looks. The two-colour plaid I have prepared in this knitted swatch requires a multiple of 8 plus 2 stitches and is knitted with two colours over 10 rows.
Aside from knitting and purling, this stitch utilises elongated stitches. The elongated stitches are created by wrapping the yarn twice round the needle when knitting the stitch. The 'long stitches' are subsequently slipped either with the yarn held to the front or to the back of the work, creating the effect of vertical loops located on the top of the fabric.

Row 1 (right side): With Colour A - K1, *k1 wrapping yarn twice round the needle before completing the knit stitch, k2, k1 wrapping yarn twice round the needle before completing the knit stitch, k4; repeat from * to last stitch, k1
Row 2: With Colour A - K1, *k4, wyif sl 1 (slip 1 stitch with yarn held to the front of the work) dropping the extra loop created on row 1 off the needle, k2, wyif sl1 dropping the extra loop created on row 1 off the needle; repeat from * to last stitch, k1.
Row 3: With Colour B - K1, *wyib sl1 (slip 1 stitch with yarn held to back of work), k2, wyib sl 1, k4; rep. from * to last stitch, k1.
Row 4: With Colour B - K1, *p4, wyif sl1 (slip 1 stitch with yarn held to front of work), p2, wyif sl 1, p2; rep. from * to last stitch, k1.
Row 5: With Colour A - K1, *k1 wrapping yarn twice round the needle before completing the knit stitch, k2, k1 wrapping yarn twice round the needle before completing the knit stitch, k4; repeat from * to last stitch, k1
Row 6: With Colour A - K1, *k4, wyif sl1 (with yarn held to the front of the work) dropping the extra loop created on row 1 off the needle, k2, wyif sl1 dropping the extra loop created on row 1 off the needle; repeat from * to last stitch, k1.
Row 7: With Colour B - K1, *wyib sl1 (slip 1 stitch with yarn held to back of work), k2, wyib sl 1, k4; rep. from * to last stitch, k1.
Row 8: With Colour B - K1, *p4, wyif sl1 (slip 1 stitch with yarn held to front of work), p2, wyif sl 1, p2; rep. from * to last stitch, k1.
Row 9: With Colour B - K1, *wyib sl1 (slip 1 stitch with yarn held to back of work), k2, wyib sl 1, k4; rep. from * to last stitch, k1.
Row 10: With Colour B - K1, *p4, wyif sl1 (slip 1 stitch with yarn held to front of work), p2, wyif sl 1, p2; rep. from * to last stitch, k1.
Repeat rows 1 to 10 for pattern. Complete pattern by repeating rows 1 and 2 at the end.
